Pizza stone and pan are created to make a perfect crisp without burning the crump and topping inside. But obviously, each of them has a signature feature  to satisfy every customer’s needs.

Usually made of terracotta with a lot of tiny pores on the body, a pizza stone can retain the temperature for a long time and has a perfect humid absorbability.

You can imagine it like this: When putting the dough on the pizza stone, after heating for a while , those pores will absorb the moistures of the dough and the stone will cook  the bottom of the dough immediately. At the same time, the heat spreads throughout the dough, creating a crispy crust without burning the toppings and crump.

Pan

On the other side, the pizza pan is usually made from aluminum or cast iron. Instead of using the tiny pores to absorb the moisture, the pan is much thinner and has several small holes perforated on the surface. That gives the pan a fast heat absorption and easily distributes to the whole cake.

You also can see many pizza pans without holes on the market, those are made of thick metal that can retain lots of heat.

How to use it? 

Pizza stone – put the stone into the oven and heat it to at least 250 – 260 oC first and then lay your pizza on the pizza stone to cook it. Make sure that you remember to heat the stone inside before making the pizza.

Pizza pan – prepare a pizza directly on the pan and put it all together into the oven. Fast and neat! 

Shape and Size

Pizza stone comes in all shapes and sizes . The popular size is 15’’ and the circle or rectangle shape are much more common compared to the rest 

Since it can be more heated with the large surface area, choosing the right shape also plays  an important role. In this case, the rectangle shape is more recommended to choose the stone pizza than the circle one. The edge of this shape also gives you a simple way to put the pizza in and take it out of the oven.

While you can adjust the size of pizza with a stone, pizza pan is designed with an exact size that you can only set up the dough according to and bake all together at the same time.

For A More-crispy Pizza – Pizza Stone Vs Pan

One of the pizza stone’s benefits is the material that can spread  heat more evenly, and the absorbability that drain moisture from the dough quickly . Besides, you need to heat the stone first before putting the pizza on it, which creates  a strong thermal effect immediately that can make the dough bottom bulge and crust. Unfortunately, the pan cannot do it.

So the main difference of taste is just from the way you cook and which one you prefer, a thick crispy crust a thin, brittle one.

Which Is More Convenient?

Honestly, the pizza pan wins this time!

Because of the chemical-absorbed material, a pizza stone is not recommended to be washed with detergents. You can only use the fabric or brush to mop it under plain water.

And another inconvenience is it’s easy to break or crack when being dropped  and when being heated under the high temperature if you don’t choose the quality product.

Far from the above inconveniences, the pizza pan can easily wash in many ways even with the dishwashing machine thanks to the slippery surface, the dirt is easy to remove. It’s simple to keep a pizza pan for long-term use either.
