To the uninitiated eye, New York strip and Ribeye basically look the same. After all, both are taken from beef. Yet, these two have subtle differences. Here are their succinct differences:

Their Names spell a big difference!

The obvious difference between these two steaks is their names. Ribeye suggests that it is taken from the rib section of the beef. It may come with bones or may not. Some Ribeye steaks had the bones extracted, leaving a gaping hole that looks like an eye that has been gorged out of its socket. Hence, it is referred to as “Ribeye.”

On the other hand, the New York Strip is actually a strip steak. However, it got nicknamed “New York Steak” because of a restaurant (Delmonico’s Restaurant) in New York that offers this steak as its signature dish. Soon after, it is nicknamed “New York Strip.”

The Ribeye primarily differs from the New York strip because it is taken from a different section of the beef. It is a fact that the beef’s body has been partitioned by butchers into different specific sections. The ribeye, for example, is taken from the rib section of the beef. This section spans the six to twelve ribs of beef. The New York strip, on the other hand, is taken from the short loin section of the beef.

Composition

If you are aching for a tender steak that comes with better flavor along with smooth texture, you should go for the Ribeye. The Ribeye is very popular in barbecues. It is rich in fat marble. Thus, it is very juicy and tender.

The Ribeye is taken from the longissimus dorsi, a muscle that runs down the spine, outside of the ribs. This muscle is not often used and thus it has plenty of fat marbling. So, if you are looking for a fatter steak that is tenderer, you should go for the Ribeye.

The New York Strip, on the other hand, also comes from the same muscle, Longissimus dorsi, though it is taken from the short loin section. It comes with less saturated fats and it is less tender than the Ribeye.

Afterward, you can finish it off on the medium heat side. The Ribeye can cause a lot of flareups given its high level of fat.

The New York Strip, on the other hand, is best grilled as compared to the Ribeye. This is because it has less amount of marbling which means, when grilled, it will not likely cause flare-ups. It is also best cooked hot and fast.
