Description

With an electric pressure cooker, you can make tender, fall-off-the-bone lamb shanks in a fraction of the time! Ingredients

  • 2 tablespoons olive oil
  • 4 lamb shanks (around 1 pound each)
  • 1 teaspoon kosher salt
  • 1/2 teaspoon freshly cracked black pepper
  • 46 garlic cloves, minced
  • 3/4 cup dry red wine
  • 1 (28-ounce) can crushed tomatoes
  • 1 teaspoon dried basil
  • 3/4 teaspoons dried oregano
  • 1/4 cup chopped fresh parsley, for garnish (optional)

Instructions

  1. Set the Instant Pot to Sauté and adjust to “More” before adding the oil.
  2. Season the lamb shanks with salt and pepper after patting them dry. When the Instant Pot is hot, add the lamb and brown it all over, about 4 minutes per side. Remove from the pot and set aside on a plate. (You’ll probably need to do two at a time, adding more oil in between if necessary to avoid crowding the pot.)
  3. Add garlic to pan and cook, stirring constantly, for about 15 seconds, or until fragrant. Cook for 2 minutes, scraping the bottom of the pot to loosen any browned bits. Cook for 2 minutes after adding the tomatoes, basil, and oregano.
  4. Return the lamb to the pot, spoon some sauce on top, and seal the lid. Cook for 45 minutes on high pressure. Allow 15 minutes for the pressure to naturally release before manually releasing the remaining pressure.
  5. Serve the lamb with polenta or mashed potatoes, and garnish with fresh parsley if desired.

Notes

If you want a thicker sauce, remove the lamb shanks from the Instant Pot after cooking and use the Sauté function to reduce the sauce for a few minutes. Stir frequently to prevent the sauce from burning!
