Are Flank Steak and Skirt Steak The Same?
First off, let me clarify this issue.
People often confuse skirt steak with flank steak as the two are similar in some ways. In particular, both kinds are long cuts of steak with beefy flavor.
However, they are actually different.
As their names might suggest, the flank steak comes from the flank, while the skirt steak comes from the plate. Also, the skirt steak is thinner than its counterpart, so it takes less time to cook.
Other differences are more subtle. For example, the skirt steak comes with a stronger beefy flavor.
How To Make Sous Vide Skirt Steak
Ingredients
For the marinade, you will need:
- ⅓ cup of lemon juice
- ⅓ cup of olive oil
- ⅓ cup of soy sauce
- 1 tablespoon of Worcestershire sauce
- 1 tablespoon of minced ginger
- 1 tablespoon of Italian seasoning
- 2 tablespoons of minced garlic
- 2 green onions that are thinly sliced
Other ingredients include:
- 1 and a half pounds of skirt steak
- Salt
- Pepper
That is all about ingredients. They are not difficult to buy, right?
I believe you can find them all in the grocery store or supermarket nearby.
Let’s get to the main part now!
Instructions
Marinade
Step 1
Take out a zip-lock bag.
Add every ingredient you prepare for the marinade, including lemon juice, olive oil, soy sauce, Worcestershire sauce, minced ginger, Italian seasoning, and thinly sliced onions, into the bag.
Finally, put skirt steak in.
Step 2
Close the bag and shake it to coat the meat completely.
Step 3
Place the bag into the refrigerator and let it marinate for about 30 minutes to 2 hours.
You have finished marinating the steak. Isn’t it too easy?
Next, I will show you the Sous Vide cooking method to cook the best Sous Vide skirt steak.
Sous Vide Cooking Technique
Step 1
When you think the steak is ready, take it out from the marinade and place it in another zip-lock bag.
Step 2
Seal the bag but leave one small corner open. Then, place it gently in the water bath.
Make sure the bag is filled with water before zipping the rest of it.
Step 3
Do you have a Sous Vide container? It is great if you have one, but if not, a large pot shall be fine.
Pour water into the container (or the pot). Then, set the Sous Vide precision cooker to 54 Celsius degrees (130 Fahrenheit degrees) to achieve medium rare doneness.
I tried cooking the skirt steak at many temps before, and this internal temp of 54°C produces the best result. You will have a tender and juicy skirt steak.
If you want to cook more or less, I have a table of doneness and corresponding temperature for you to consult.

Step 4
When the water reaches the temperature that you set, dip the bag lower so that it is fully submerged.
Sear
Step 1
Now that your steak is cooked, take the bag out of the water bath and put it into the refrigerator for about 10 minutes.
Step 2
Remove the steak from the bag. Use a paper towel to remove any excess moisture from the steak.
Step 3
Season the cooked steak with salt and pepper.
Step 4
Sear the skirt steak on the grill or skillet. If you use the grill, heat it to 450°F (232°C) before adding the steak. Meanwhile, for the skillet, you should place it on medium-high heat.
Either way, sear the steak for 1 minute per side to make sure it is evenly cooked edge to edge.
Step 5
The final step is here! What you need to do is to slice the steak into thin pieces. Serve the Sous Vide skirt steak with your favorite sauce and enjoy it right away!
Alternatively, you can serve the steak with tacos or sandwiches.
How does it taste?
If you follow the recipe closely, you will have super tender and flavorful slices of steak. More notably, the steak is cooked to your desired doneness. Amazing!
There is no need to go to the steakhouse often once you know this Sous Vide steak recipe.
How Long Should You Sous Vide Steak
Sous Vide time varies in different situations.
In this recipe, we can cook marinated skirt steak perfectly in 2 hours. Sometimes, it takes up to 10 hours to have a perfect dish of Sous Vide skirt steak.
For center cuts like rib eye, you might need 1-2 hours of Sous Vide time.
Can You Marinate Steak Before Sous Vide
Yes, you can, and I highly recommend it.
Why so?
While marinating, the acid from lemon juice will tenderize the steak. Therefore, you will have tender and juicy Sous Vide skirt steak in the end.
