You’ll be astounded at how delicious Sous Vide Chicken Wings are! It eliminates the mess and oil associated with deep-fried chicken wings while producing a delicious game-day snack! Because they are cooked sous vide, these Buffalo chicken wings are perfectly tender, juicy, and flavorful.

For the Chicken Wings
- 3 pounds chicken wings
- 1/2 teaspoon salt
- 1 teaspoon garlic powder
- 1/4 teaspoon paprika
- 1/4 ground black pepper
For the Buffalo Sauce
- 1 cup hot sauce
- 2 tablespoons butter melted
- 1 tablespoon honey
- 1 teaspoon garlic powder
Instructions
- Fill a large pot or container halfway with water. Set the temperature of the sous vide precision cooker to 165°F (74°C).
- Combine salt, garlic powder, paprika, and pepper in a small bowl.
- Season the chicken wings in zip-top bags (I used two) with the spice rub.
- Arrange them in a single layer and seal the bag with a vacuum sealer or the “water displacement” technique. (Seal all but one corner of the bag, then slowly immerse it in cold water, making sure everything below the zip-line is submerged, and then seal the rest of the bag.)
- Place the bag in the warm water bath of the sous vide machine. Make sure the chicken wings are completely submerged while the bag’s seams are above water. If necessary, add heavy kitchen items to the bag to weigh it down.
- For Fresh Wings: Cook for 1.5 hours.
- Cook for 2 hours if using frozen wings.
- When the timer goes off, take the chicken wings out of the bag and pat them dry with paper towels. (Be sure to thoroughly dry the surface.)
- Combine the hot sauce, butter, honey, and garlic powder in a mixing bowl.
- Brush the cooked chicken wings with half of the buffalo sauce.
- (Optional) Arrange the chicken wings on a broiler pan (or baking sheet) and broil for 3-5 minutes per side, or until the skin is crispy. (For the best results, place the chicken about 2-3 inches below the broiler.) Keep a close eye on the chicken to avoid burning it.
- Serve immediately with your favorite dips or brush the remaining buffalo sauce over the wings.
Notes
According to the USDA, if you notice some pink hues, it’s safe to eat as long as the internal temperature reaches 165°F.
