- 2 tablespoons unsalted butter
- 2 cloves garlic, minced
- 1 onion, diced
- 2 cups diced corned beef
- 2 teaspoons Worcestershire sauce
- Kosher salt and freshly ground black pepper, to taste
- 2 tablespoons chopped fresh parsley leaves
FOR THE POTATOES
- 1 pound russet potatoes, diced
- 1 tablespoon olive oil
- 1/2 teaspoon dried thyme
- 1/2 teaspoon dried oregano
- 1/2 teaspoon dried basil
- Kosher salt and freshly ground black pepper, to taste
Instructions
- Preheat the oven to 400°F. Coat a baking sheet with nonstick spray or lightly oil it.
- Arrange the potatoes on the prepared baking sheet in a single layer. Season with salt and pepper to taste after adding the olive oil, thyme, oregano, and basil. Toss gently to combine.
- Bake for 18-20 minutes, or until golden brown and crisp; remove from oven and set aside.
- In a large skillet over medium-high heat, melt 2 tablespoons butter. Add the garlic and onion to the skillet and cook, stirring frequently, until the onions are translucent, about 3-4 minutes.
- Cook, stirring frequently, until the corned beef is slightly browned, about 3 minutes. Stir in the potatoes and Worcestershire for about 4-5 minutes, or until the potatoes are evenly browned; season with salt and pepper to taste.
- Serve immediately, if desired garnished with parsley.
