Ingredients

Scale
  • 6 strips diced raw bacon
  • 2 pounds ground sirloin formed into 8 ounce patties
  • 2 small peeled and thickly sliced yellow onions
  • 4 cups domestic mushrooms cut in half
  • 4 cups beef stock
  • 2 teaspoons of fresh thyme
  • 2 tablespoons of olive oil
  • 4 shredded Idaho potatoes
  • sea salt and cracked fresh pepper to taste

Instructions

  1. Set aside the beef patties that have been seasoned with salt and pepper.
  2. Cook the bacon in a large saute pan over medium heat until crispy. Once the bacon is cooked, set it aside and add the seasoned meat to the same pan.
  3. Sear the meat for 2 to 3 minutes per side, or until browned but not done.
  4. Once the steaks are brown, remove them from the pan and place them on a plate. After that, add the onions and mushrooms to the pan, reduce the heat to medium, and caramelize for 12 to 15 minutes.
  5. When the vegetables are golden brown, deglaze with the beef stock, season with salt and pepper, and bring to a boil. Return the bacon and chopped steaks to the pan and cook for another 20 to 25 minutes, or until the vegetables are tender and the chopped steak is cooked through.
  6. In a separate large saute pan, heat the olive oil and shredded potatoes over medium-high heat. Cook for 20–25 minutes, flipping the potatoes every 4–5 minutes, until golden brown. Season with salt and pepper to taste.
  7. Garnish the chopped steak with hash browns, onions, mushrooms, gravy, and thyme.

Notes

Make sure the heat is set to medium-high to achieve the perfect sear on those chopped steak patties.

Allow the mushrooms and onions to caramelize; they should be browned and flimsy.

Season the gravy well because the braising liquid will season the burger patties as well.

To get the most flavor out of your herbs, start with dry herbs and finish with fresh herbs.
