Description

Beef consomme is a clarified version of brown beef stock; it has a clear color, a strong flavor, and is fat-free. As a starter for a gourmet dinner, serve it in cups. I like to top it with small fried meatballs and risotto bites to make it more festive.


Ingredients

  • 6 cups brown beef stock homemade
  • 1 carrot diced
  • 1 stalk of celery diced
  • 1 onion diced
  • 1 cup lean minced beef
  • 4 egg whites
  • 1 tbsp lemon juice

Instructions

Prepare the raft:

  1. Whip the egg whites until stiff with an electric whisker. Check that the eggs are at room temperature.

Clarify stock:

  6. Bring to a boil, whisking frequently.
  7. Once it begins to boil, make a hole in the raft to allow steam to escape while it is simmering.
  8. Allow it to simmer for 1 hour without stirring to allow the raft to cook without releasing any particles.

Filter consomme:

  1. When the Consomme is finished,
  2. Filter it through a fine-mesh sieve for the first time to remove the raft.
  3. Then, for the second time, strain it through a paper towel or cheesecloth.
  4. Keep it in the fridge until ready to serve.

Notes

Check that the egg whites are at room temperature because cold egg whites will not firm up.

You can replace lemon juice with vinegar for the acid component.

If you want a stronger aroma, replace the lean meat in the raft with wild game or duck.

The mirepoix can be replaced with leeks and carrots for a more delicate flavor.

Once the stock has boiled, poke a hole in the raft to allow steam to escape while the stock is simmering uncovered.
